This Avocado Cucumber Salsa is a fun change from tomato-based salsa. Scoop it with chips or serve it on tacos. Add pineapple or mango for a fresh summer twist!
INGREDIENT :
2 cups diced cucumber*
3/4 cup diced red onion
8 oz diced pineapple (or 1 cup fresh)
1 large avocado, cubed (ripe but slightly firm)
3 Tbsp minced cilantro
2 Tbsp freshly squeezed lime juice
2 Tbsp rice vinegar
1/2 tsp honey
pinch of salt
RECIPE DIRECTION :
In a bowl, combine cucumber, red onion and pineapple and mix well.
Add avocado and cilantro.
In a small bowl, combine lime juice, rice vinegar and honey and mix well.
Pour over cucumber mixture, add a pinch of salt and gently stir to combine.
Serve with chips for scooping, on tacos or salad etc.
