This Loaded Strawberry Spinach Salad is a summer favorite. Serve it as a side dish or add some protein and make it an easy lunch or dinner.
INGREDIENT :
8 cups baby spinach
2 cups strawberries, sliced
3/4 cup onion, thinly sliced
1– 2 cups apples, chopped
2–3 cups roasted sweet potatoes, diced
1 large avocado, diced
1/4 cup crumbled feta, optional
juice from two lemons (approx 1/4 cup
1/4 cup oil (i use avocado)
1/4 cup white wine vinegar
1 Tbps poppy seeds (or chia seeds)
2 tsp sugar (or to taste)
optional protein: chicken, steak, lentils, chickpeas, hard boiled eggs
RECIPE DIRECTION :
Combine lemon juice, oil, vinegar, poppyseeds and sugar in a small bowl and whisk to combine. Taste and add more sugar if needed. Makes about 3/4 cup dressing.
Add remaining ingredients to a large bowl and toss to combine. Divide between 4 bowls.
